One thing I love to eat in Switzerland (apart from custard and strawberry pastries) is rosti – essentially a big potato cake. Have eaten it there made from packet potatoes but as we can’t get that here, attempted my own from scratch last night. It turned out pretty good.

Grated a pile of potatoes (in the end took the somewhat controversial step of boiling the potatoes briefly first).

Fried the gratings in lots of salt and butter and oil then patted them into a cake.

Performed circus twists with a pot lid to get the cake to flip as a single mass to cook on the other side.

Next time I might use less butter but otherwise delicious!
