Christmas mince

The finished product! Looks better than last year’s thanks to the time taken to cut all the fruit up. Now we wait for pie time. Not sure whether to keep the fruit mince in the fridge or pantry. I kept it in the fridge last year but it seemed to make it quite hard and sticky. Might have to ask Mum.

Christmas Mince, according to Merehurst’s Complete Christmas Cookbook, made with butter and brandy (4 tblsps) can be kept in a cool dark place (England?) for up to 3 months. However, if made with shredded suet will keep for several years in a cool, dark, dry place in a screwtop jar!!!
My Christmas Mince recipe (butter & brandy) recommends keeping in the fridge for a few weeks – perhaps because it’s Au. However, in Awakeri it has been known to survive deliciously for 6 months -depending on the voraciousness of the holiday guests.
