Y U M !! Using fresh buffalo mozzarella and tomatoes we got from Moore Wilsons at the weekend and basil that we picked from our pot just minutes before serving we had Insalata Caprese for dinner tonight. It was SO good. Tasted just like the real thing that I’ve eaten plenty of through Italy. Buffalo mozzarella makes all the difference. So healthy … now going to dig into the Orio cookie ice-cream 🙂

I could happily live on insalata caprese with fresh basil followed by ice cream (strawberry!)! YUM!
