Involtini di Melanzane

Complex creations from Orange Kitchen last night! Earlier this week we went to a fantastic cooking class/demonstration at Caffe Italiano in Cuba St. It was a very VERY generous gift from a friend and despite being up to my eyeballs in work off we went for a night off.

The two Massimo’s that took the class were very entertaining – they spent most of the night teasing each other about how dreadful their English was and trying to sell everything they were using or cooking with – stuff that was on the 3rd shelf in the fridge, or over there on the pasta shelf, all the way down to one of the chef’s own knives.

They made (and we sampled) three wonderful dishes (& I was thrilled that everything they made I didn’t mind eating! No chocolate, no fishy stuff, no blue cheese, no mushrooms…):

  • Involtini di Melanzane (eggplant rolls)
  • Orecchiette alo speck e taleggio (a kind of ham & soft cheese pasta)
  • Aunty Rita’s secret pandoro & limoncello & cream creation

So we had a go at the eggplant rolls last night – very tasty and tasted like the ones made by the real Italian Massimo’s.
