Can’t believe we chose tonight of all nights (given that we had a product release today and were up at 5am and finished work at 6pm) to have a bit of a kitchen experiment. It was a case of oh god, what’s in the fridge and what possessed us to get an aubergine at Moore Wilson’s last week without any intended purpose for it … and so on.
However, after the success of the Involtini Melanzane the last couple of times, based on that we gathered up a few bits an ended up with:
Aubergine stuffed with wild rice, sweet peppers and cherry tomatoes

Man it was GOOD.
